Allium roseum è una specie spontanea del genere Allium e appartiene alla famiglia delle Alliaceae, ed è una delle specie della flora tunisina. In questo lavoro ci siamo proposti di valutare le attività antiossidanti e antimicrobiche delle frazioni volatili e polari dei vari organi (foglie, fiori e bulbi) di Allium roseum var. grandiflorum Briq e di caratterizzare gli estratti con attività interessanti al fine di correlare la composizione chimica con il potenziale antiossidante e antimicrobico e di valorizzare le sostanze bioattive offerte dalla biodiversità tunisina. La valutazione del potere antiossidante mostra che la frazione di acetato di etile delle foglie ha una forte attività antiossidante. L'analisi LC-MS ha mostrato la ricchezza di questa frazione in flavonoli. Alla frazione volatile è stata attribuita una forte attività antimicrobica, addirittura superiore a quella dell'ampicillina. Sui ceppi selezionati è stata dimostrata la presenza di un importante composto solforato: il dimetiltiosolfato (48,28%), dotato di attività antibatterica e antimicotica.
